Everyone Loves Parsnip and Pear Soup

How It’s Made

The Oyster Bar cooks this soup with parsnips, pears, garlic, onions, and potatoes simmered in vegetable stock, then finished with milk and calvados. It’s garnished with pistachio pesto and truffle oil, which makes for a delicious blend of sweet, nutty, spicy flavors that are perfect for the fall season!

Parsnips and pears are very similar in flavor, coming together in a delicious combination. The sweet but spicy flavors of the pears pair perfectly with the earthy warmth of the parsnips to create an unforgettable soup.

It’s well worth the trip, though, since you’ll be able to capture some stunning images of the weather.
